sayur keladi goreng

Sayur keladi is one of my fav dishes and I recently cooked it for bf & myself. I bought the vege from a colleague and hence thought out mum's keladi dish back home in Kch. I did not take any pics but if this recipe is guaranteed yummy..

- dried prawns
- chilli
- garlic
-onions
- sayur keladi

1. Blend dried prawns, chilli, garlic, onions
2. Heat wok, fry the blended mixture
3. Add sayur keladi
4. Add some water, put the wok lid on. Let it simmer until vege is soft.
5. Serve with hot rice

Squid with bell peppers & vege

This is another quick & easy recipe, and squid is my fav seafood.

-Squid (sliced according to preference)
- bell peppers (yellow/red)
- spring onions (diagonally sliced)
- carrots (shredded)
- chopped garlic

1. Heat wok, fry garlic then add all the vege
2. Add squid
3. Add light soya sauce. Need not add water because squid will release water.
4. Stir until squid is cooked. Dont cook it too long as the squid will get tough.

chicken with ginger & spring onions

Another easy dish to make is chicken with ginger & spring onions. It's light & delicious.

- chicken fillets
- ginger slices
- spring onions

1. Slice chicken into fillets, slice ginger. Cut spring onions (take the green part) into 4-5cm in length.
2. Heat wok, stir fry ginger. Add chicken then spring onions.
3. Add light soya sauce & a dash of pepper.
4. If you like slightly thick gravy, add the cornflour+water mixture. I like it dry so I did not add anything.
5. Ready to serve

sambal kangkung/midin


Sambal kangkung is another simple dish to cook, unfortuntely I only have small chillies (the colour of the paste should be slightly reddish). You need;

- dried shrimps, soaked in water
- belacan
- chiliies
- onions
- garlic

Pound all of the above..

1. Heat wok, fry the pounded ingredients. When its fragrant, add kangkung, stir fry until cooked. Add salt a bit to taste. Otherwise, not adding salt is fine as dried shrimps & belacan are already salty.

This vege can be substituted with paku or midin.

chicken rendang

I have always loved this dish & look forward to it during Raya. But I learnt that this recipe is not that difficult at all and requires no oil as the oil comes from the coconut milk.

You would need

- chicken pieces
- galangal
- ginger
- shallots & garlic
- lemongrass (chopped)
- coconut milk
- salt
- daun kunyit (turmeric leaves)
- fresh turmeric or turmeric powder
- kerisik

1. Marinade chicken with turmeric powder. If you're using fresh turmeric then pound/blend it together with the ginger, galangal, shallots, lemongrass & garlic.
2. In a pot, heat pot then add coconut milk, chicken & pounded ingredients
3. Let it cook slowly under low heat. When it simmers, add seasoning & kerisik.
4. Let it boil further before adding the turmeric leaves.
5. Ready to serve.

nasi lemak

Today after thinking about what to cook for lunch, I finally decided to cook nasi lemak. My version is simpler because I'm eating alone and hence I didnt prepare fried ikan bilis & peanuts.
For rice
- rice
- coconut milk
- a bit of water
- salt
- ginger slices
- pandan leaves

1. Wash rice then cook right the usual way.

For sambal
- onion (pounded)
- dried chillies ( blanched in hot water then pounded with onion)
- anchovies
- tamarind juice
- salt & sugar

1. Heat wok, add pounded ingredients
2. Add water, salt, sugar & tamarind juice. Let it simmer.
3. Add anchovies. Let the gravy thicken by letting it simmering under low heat.
4. Ready to serve

Dont forget to prepare sliced hard boil egg & cucumber slices. For a complete set, deep fry anchovies & peanuts. You can also serve it with salted fish...

begedel daging a.k.a potato patties

I actually wanted to make during the weekend, but then I thought since its a simple dish and I have most ingredients at home except potato then I can make it on the spot at home..
So I stopped by Servay, bought potatoes then went home and made begedel.. my first attempt and it worked.. so easy to make!

-potatoes
- minced beef/chicken/pork (any type will do)
- salt & pepper to taste
- egg
- fried shallots
- coriander (chopped)

1. Boil potatoes, when cooked, leave it aside until potatoes are dry. This is to get rid of the excess water on the potatoes.
2. Mash the potatoes, add minced meat, coriander, fried shallots, salt & pepper
3. Shape into patties (like burger patties)
4. Beat egg then coat patties in egg.
5. Heat wok, when oil is hot, turn to low fire, fry patties until brown
6. Ready to serve
